Paleo Mayonnaise

Serves: 1 cup

Prep Time: 5 minutes

Ingredients:

  1. 1 Egg Yolk
  2. 1 Egg
  3. 1 1/2 tsp. Apple Cider Vinegar
  4. 1/4 tsp. Mustard
  5. 1/4 tsp. Sea Salt
  6. Dash Cayenne Pepper
  7. 1 cup Extra-Light Olive Oil

Directions:

  1. In a blender, combine the egg yolk, whole egg, apple cider vinegar, mustard, sea salt, and cayenne pepper. With the blender on low, drizzle in the olive oil as slowly as possible so that emulsification takes place. Continue to add the oil until it is completely combined.
  2. Store the mayonnaise in the refrigerator for up to 7 days.
